Hearty, a restaurant opening in Chicago this week, is doing what others should be doing. Its American regional menu is being complemented by American regional wines: "Hearty is proud to offer a wine list comprised solely from domestic vineyards. With wines from states as varied as Georgia and Texas; a few of these cannot be found outside of their home states and are poured exclusively here."
